This paper describes the theoretical and practical labor of an Experimental Factory of the Ministry of Agriculture in Aberdeen – Scotland with a pilot plant of a Accelerated Freeze Drying process (AFD). The book is divided in two parts: 1stdDescribes the engineering bases to scale equipments and give dimension of the system end operational parameters. The 2nd describes operational studies and values for a several products submitted to the AFD process. Those experiments toke effect in 1955 to 1960.
